What is "Beyond Viand?"

I like to think of Viand as a delicate, delectible dish; a memorable food stuff; something that will linger in your memory as you have savored it on the tongue.  Beyond Viand, therefore evokes wild hits and near misses; an experimentation of what can happen when rules are not only broken, but even unknown. 

I've never been trained in cooking, so in many ways, what I do can very literally be done by ANYONE.  There is no magic, other than that which you create. 

I love flavors as they invade my senses.  What is the dish's visual appeal?  Can I hear a crunch, a sizzle, a pop that creates excitement?  How is the texure as I hold the food in my mouth--or can I eat this with my hands?  I let the scent waft up and bathe my nostrils, and I inhale through my nose and mouth slightly so the smell can enhance the taste.  Finally, I taste the flavor on all parts of my tongue.  How does it first strike me?  What ingredients are there?  What experience does this evoke?  How does the flavor finish in my mouth?  Is there an aftertaste?  All the senses of food transport my imagination and memories into visceral and immediate realities.

Ok, so maybe there is no magic other than that which you create AND the experience you are willing to have. 

That is Beyond Viand.
